RECIPE OF BASIC BROWN STOCK
|Beef or veal bones chopped||500||gms|
|Onion peeled and sliced||1|
|Carrot scraped and sliced||2|
|Celery washed and chopped||1||stalk|
Method For Preparing Basic Brown Stock Soup
Remove fat from the bones and chop it.
Heat the butter in a roasting pan in a preheated oven at 2000 c and brown the bones for 30 minutes.
Put the bones into a large pan, cover with water and bring to boil.
Remove the scum carefully; add salt, peppercorns, celery and vegetables.
Cover and simmer gently for one hour.
Strain, cool until the fat is set and then remove the fat.
Cover the stock and chill. This will yield approximately 1.25litres.
