RECIPE OF CARAMELIZED RICE

Basmati rice 1 cup
Vegetable oil 2 tbsp
Granulated sugar 2 tbsp
Cardamom 4
Cinnamon 2
Cloves 3
Salt To taste
Water 2 cups

Method For Preparing Caramelized Rice

  • 1.
  • Wash the rice, soak it in water for 15 minutes and drain it aside. In a large pan, heat vegetable oil over a medium flame.

  • When the oil is hot, sprinkle the granulated sugar over the surface and wait until it has caramelized.

  • 3.
  • Do not stir. Reduce the heat to low and add the spices. Let sizzle for above 15 seconds, then add the rice and salt.

  • 4.
  • Fry gently,stirring for 3 minutes. Pour the boiled water and let it boil steadly for 2 minutes. Then reduce the heat to very low. Cover the pan and cook for 10 minutes.

  • 5.
  • Remove this rice from the heat and let it stand for 5 minutes.

  • 6.
  • Gently fluff up the rice with a fork and transfer to a warmed dish to serve.
