RECIPE OF CARAMELIZED RICE
Method For Preparing Caramelized Rice
Wash the rice, soak it in water for 15 minutes and drain it aside. In a large pan, heat vegetable oil over a medium flame.
When the oil is hot, sprinkle the granulated sugar over the surface and wait until it has caramelized.
Do not stir. Reduce the heat to low and add the spices. Let sizzle for above 15 seconds, then add the rice and salt.
Fry gently,stirring for 3 minutes. Pour the boiled water and let it boil steadly for 2 minutes. Then reduce the heat to very low. Cover the pan and cook for 10 minutes.
Remove this rice from the heat and let it stand for 5 minutes.
Gently fluff up the rice with a fork and transfer to a warmed dish to serve.
