RECIPE OF INJI CURRY
|Ginger (peeled and chopped)||1||cup|
|Thick Tamarind juice||1/2||cup|
|Red chilli powder||1||tsp|
Method For Preparing Inji Curry
Heat oil in a pan and fry the ginger in it until it is golden brown.
Add some green chillies into the fried ginger and fry for few minutes. Remove from fire and allow it to cool. Grind well and keep aside.
Heat oil in a pan and add some mustard seeds into it. When they pop, add some fenugreek seeds into it. Also add few curry leaves into it.
Now add the ground ginger, asafoetida, red chilly powder, jaggery, tamarind, and salt into it. Mix well and keep on fire for 10 minutes until the oil gets separated.
Remove from fire and allow it to cool. Keep in a dry bottle in the refrigerator for few days. Always remember to use a dry spoon to take some.
