inji curry

Ginger (peeled and chopped) 1 cup
Asafoetida 1/4 tsp
Thick Tamarind juice 1/2 cup
Green chillies 2
Mustard seeds 1/4 tsp
Red chilli powder 1 tsp
Fenugreek seeds 1/4 tsp
Jaggery (powdered) 3 tbsp
Oil 1/4 cup
Curry leaves Few
Salt To Taste

Method For Preparing Inji Curry

  • 1.
  • Heat oil in a pan and fry the ginger in it until it is golden brown.

  • 2.
  • Add some green chillies into the fried ginger and fry for few minutes. Remove from fire and allow it to cool. Grind well and keep aside.

  • 3.
  • Heat oil in a pan and add some mustard seeds into it. When they pop, add some fenugreek seeds into it. Also add few curry leaves into it.

  • 4.
  • Now add the ground ginger, asafoetida, red chilly powder, jaggery, tamarind, and salt into it. Mix well and keep on fire for 10 minutes until the oil gets separated.

  • 5.
  • Remove from fire and allow it to cool. Keep in a dry bottle in the refrigerator for few days. Always remember to use a dry spoon to take some.
