Ash gourd(chopped) 2 cup

Method For Preparing Olan

  • 1.
  • Peel the ash gourd and also remove the seeds. Cut it into small pieces.

  • 2.
  • Cut the green chillies lenghtwise. Wash the black-eyed beans in water and make it clean.

  • 3.
  • Add 2 cups of water and little salt to the beans and cook it in a pressure cooker.

  • 4.
  • In the first whistle, reduce the heat and wait for 2 more whistles. Remove from heat and keep it closed for 15 minutes. Drain the water

  • 5.
  • Now cook the ash gourd in a medium heat by adding green chillies, salt and 1 1/4 cup of water.

  • 6.
  • Then add the cooked beans and curry leaves into it and cook for another 2 minutes.

  • 7.
  • Finally add the coconut milk into it and remove from fire.

  • 8.
  • Pour 1 tbsp coconut oil and serve it with boiled rice.
