Method For Preparing Palappam

  • 1.
  • Soak the rice and leave it overnight. Wash and drain the rice and keep aside.

  • 2.
  • Mix a little yeast with sugar and 1/2 cup of light warm water and keep aside for few minutes until it foams.

  • 3.
  • Grind few raw rice with few cooked rice and very little water till it become a smooth batter. Add 2-3 icecubes to prevent overheating of the mixie while grinding.

  • 4.
  • Keep the batter in a bowl and continue grinding. Dont forget to add the yeast solution while grinding the last batch.

  • 5.
  • Leave the batter in a warm place for 6-8 hours. Ensure the bowl is large enough to prevent the batter from overflowing.

  • 6.
  • Add 1/4 – 1/2 cup of coconut milk to make a batter of medium consistency. Also add sugar and salt as required and stir well.

  • 7.
  • Heat a Palappam Chatti and lightly grease it with oil. Once the Palappam Chatti is hot, pour a ladle full of batter and swirl the pan in one direction so that the batter spreads to the edges.

  • 8.
  • Keep it covered and cook it for few minutes. Serve hot.
