Method For Preparing Pineapple Squares

  • 1.
  • Mix flour, salt and butter in a bowl. Using a fork mix sour cream with half tbsp sugar and add it to the above mixture.

  • Add lemon essence to the flour. Mix well with a wooden spoon; leave it in the fridge for 30 minutes.

  • 3.
  • Drain the pineapple and mix with sugar and corn flour in a saucepan. Cook gently until the mixture become clear and thick.

  • 4.
  • Set aside to cool. Divide the pastry into 2 parts.

  • 5.
  • Roll out both halves. Line the baking tray with one of the halves.

  • 6.
  • Pour the cooled pineapple mixture over it and spread evenly. Cover with other half of the pastery.

  • 7.
  • Put it in the freezer for 15 minutes till firm.

  • 8.
  • Preheat the oven to 180^0. Bake for about 40 minutes.

  • 9.
  • Leave to cool in the baking tray.

  • 10.
  • Sprinkle icing sugar all over; Cut into squares.
