RECIPE OF HEALTHY TOMATO SOUP

Moong dal 1/2 cups
Tomatoes chopped 5 cups
Onion chopped 1 cup
Low fat milk 1/2 cup
Butter 1 tsp
Pepper 1/2 tsp
Salt To taste
Toasted whole wheat bread croutons 1/2 cup
Milk powder 2 tbsp
Lukewarm water 100 ml

Method For Preparing Healthy Tomato Soup

  • 1.
  • Mix the milk powder with 4 tbsp lukewarm water and make a smooth paste.

  • 2.
  • Add the remaining water and whisk. Boil it.

  • 3.
  • Wash the dal and cook it in a pressure cooker with chopped tomatoes and 4 cups of water.

  • 4.
  • Cool and blend in a blender. Keep aside.

  • 5.
  • Melt the butter in a pan, add the onions, sauté for 4 minutes and add the pureed dal-tomato mixture.

  • 6.
  • Mix the corn flour with 4 tbsp of water and add to the soup. Stir well.

  • 7.
  • Add the fat free milk, salt and pepper and bring to boil. Garnish with roasted whole bread croutons and serve hot.
