Method For Preparing Unniappam
Grate the jaggery into fine pieces and then add some water into it and bring it to heat.
Continue heating until the jaggery is melted. Allow it to cool.
Pour some ghee into a pan and add the coconut pieces into it. Fry it till golden brown.
Grind the bananas into a smooth paste and keep aside.
Mix together the rice powder, jaggery and banana puree in a bowl. Add some water to get a consistency of idili batter.
Add the coconut pieces into it. Also add some baking soda and mix well. Keep aside for fermentation for 2 hours.
Heat oil in a unniappachatti and pour a tablespoon of batter into each hole.
After 2 - 3 minutes turn the unniappam and cook until it turns golden brown.
Drain and serve hot.
